Whole Wheat Couscous Tartlets

The tartlets are a delicious treat for children for a special snack. To avoid offering packaged sweets, you may have tried making homemade snacks that are much healthier and free of any chemicals. Among the list of snacks suitable for the little ones are our whole wheat couscous tartlets. The recipe is by our food blogger Francesca Lucisano.

Ingredients for 4 tartlets

For the pastry

  • 100 g of whole wheat couscous
  • 100 ml of water
  • 200 g of all-purpose flour
  • 150 g of butter
  • 100 g of sugar
  • 1 egg
  • 1 teaspoon of baking powder.

For the filling

  • 200 g of apricot jam

Preparation

Rehydrate the couscous in lukewarm water and let it rest for 10 minutes, then fluff it with a fork. Knead flour, baking powder, fluffed couscous, sugar, and butter on a pastry board.

Finally, add the egg and continue kneading until you obtain a smooth and homogeneous dough. Let it rest in the refrigerator for 30 minutes, wrapped in plastic wrap.

After the resting time, take the dough out of the refrigerator and roll it out to a thickness of about half a centimeter. Cut out discs about 10 cm in diameter and line the tartlet molds.

Fill each tartlet with the jam and use the remaining pastry to prepare decorative strips. Bake the tartlets in a preheated static oven at 180°C for 30 minutes. After this time, remove them from the oven and let them cool. Unmold and serve them at the table.
