The perfect combo? A rainy autumn afternoon and the aroma of cookies in the oven! Here are the whole wheat couscous cookies. The recipe is from our food blogger Francesca Lucisano.
Ingredients for 12 cookies:
100 g of whole wheat couscous
100 ml of water
200 g of all-purpose flour
150 g of butter
100 g of sugar
1 egg
1 teaspoon of baking powder.
Preparation:
Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it with a fork. Pour the flour along with the baking powder onto a work surface and add the fluffed couscous, sugar, and butter.
Knead everything well and finally add the egg. Continue kneading until you obtain a smooth and homogeneous dough. Let it rest in the refrigerator for 30 minutes, wrapped in plastic wrap.
After the resting time, take the dough out of the refrigerator and roll it out to a thickness of about half a centimeter.
Cut out the cookies and place them on a baking sheet lined with parchment paper. Bake them in a preheated static oven at 180°C for 20 minutes.
After this time, take them out of the oven and let them cool. Serve them at the table.
