Couscous crackers are delightful finger foods to enjoy during an aperitif or as a snack, even at the beach! The recipe for Tomato Couscous Crackers is by our food blogger Francesca Lucisano.
Ingredients:
100 g of tomato couscous
100 ml of lukewarm water
100 g of all-purpose flour
30 g of grated Parmesan cheese
30 ml of extra virgin olive oil
salt to taste
Preparation:
Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it with a fork.
Add salt, cheese, and oil. Mix well and add the flour.
After incorporating it, if the mixture is very hard, add water until you achieve the correct consistency.
Pour the mixture into a 30×30 cm baking tray lined with parchment paper and spread it well with the back of a spoon. Bake in a preheated static oven at 200°C for 30 minutes.
After this time, remove from the oven, cut into small squares, and bake again on grill setting for 5 minutes. Serve at the table.
