Spinach Couscous Toast

Toast is a favorite snack for both adults and children, have you ever tried it with couscous? Here is our autumn version. The recipe for spinach couscous toast is by our food blogger Francesca Lucisano.

Ingredients for 2 toasts:

400 g of spinach couscous
200 ml of water
200 g of bread crumbs
2 eggs
1 pinch of salt
Extra virgin olive oil as needed.
For the filling:
200 g of spreadable cheese
Green salad as needed

Preparation:

Pour the spinach couscous into a bowl and rehydrate it with warm water. Let it rest for 10 minutes, then fluff it with a fork and add the salt, bread crumbs, and eggs. Mix well until you obtain a homogeneous mixture.

Divide the mixture into 4 parts of 100 grams each and form discs using a 10 cm diameter pastry cutter. Cook the couscous discs in a pan with a drizzle of extra virgin olive oil until they are golden brown on all sides.

Assemble your toasts by spreading the cheese on the base of two discs. Top with green salad and close with the other two couscous discs. Serve.
