Pumpkin balls are a quick and delicious main course. A tasty way to bring the queen of autumn vegetables to the table. Here is our version with couscous. The recipe for spinach couscous balls with pumpkin is by our food blogger Francesca Lucisano.
Ingredients for 10 balls:
- 100 g of spinach couscous
- 100 ml of water
- 200 g of pumpkin
- 30 g of pecorino cheese
- 1 egg
- 50 g of bread crumbs
- salt to taste
- extra virgin olive oil to taste
Preparation:
Cook the pumpkin cubes in a pan with a drizzle of oil and set aside. Pour the couscous into a bowl and rehydrate it with warm water.
Let it rest for 10 minutes, then fluff it with a fork. Add the cooked pumpkin, salt, egg, pecorino cheese, and breadcrumbs. Mix everything well until you obtain a homogeneous mixture.
Shape the balls using a spoon, then cook them in a pan with extra virgin olive oil until they are golden on all sides. Serve them at the table.
