Single servings of tuna couscous, lemon-scented

When the heat starts to be felt, quick dishes are the right idea to bring to the table, simple and practical dishes that are still delicious. The recipe for the single servings of tuna couscous, lemon-scented, is by our Fernanda Nicotra, food blogger at Giallo Zafferano.

Ingredients:

  • 100 g raw couscous
  • 100 g water (boiling)
  • salt to taste
  • extra virgin olive oil to taste
  • 1 lemon (organic, juice and zest)
  • 4 lemon leaves (if available)
  • to taste fresh mint
  • 130 g tuna in oil (drained)
  • to taste parsley
  • 1 pinch garlic powder

Preparation:

Pour the couscous into the bowl, add salt, extra virgin olive oil, and boiling water, cover, and let it rehydrate for 10 minutes.
Fluff the couscous, add the drained tuna in oil, chopped parsley, lemon juice, garlic, and the grated zest of half a lemon, mix and let it rest for ten minutes.

Rinse the lemon leaves, they are not essential, but if organic, they are excellent for giving a fresh and intense lemon scent, place them inside the single-serving cups and distribute the couscous on top.

Garnish with lemon slices and mint leaves, serve immediately or store in the fridge for 24 hours, covered with plastic wrap.
