January has always been a detox month, and for the first weekend after the Christmas holidays, we have thought of a tasty yet light recipe!
The recipe for pea couscous with orange cod is by our Francesca Lucisano, food blogger at Giallo Zafferano.
INGREDIENTS:
- 300 g of pea couscous;
- 600 ml of hot water;
- 500 g of cod fillets;
- 1 orange;
- 4 tablespoons of extra virgin olive oil;
- salt to taste
- pepper to taste
METHOD
Pour the pea couscous into a bowl and add the hot water. Set aside and let it rest for about 10 minutes.
In the meantime, squeeze the orange and set the juice aside.
In a pan, pour the extra virgin olive oil and add the cod fillets. Turn them over after a few minutes, season with salt and pepper, then deglaze with the orange juice.
Let it cook for a few minutes, gently turning the fillets, until the orange juice has reduced. Set the fish aside and fluff the pea couscous with a fork.
Add the cod fillets and a little of the fish cooking liquid. Mix well until the cod is broken into pieces.
Plate and finish by decorating the dish with orange zest and half slices of the same. Serve at the table.
