Organic Whole Wheat Couscous and Orange Cake

The orange cake is a soft and simple dessert made with orange zest and juice, perfect to enjoy for breakfast or as a snack. Here is our version with couscous. The recipe for the Organic Whole Wheat Couscous and Orange Cake is by our food blogger Anna Attanasio.

Ingredients:

  • 50 g of organic whole wheat couscous
  • 100 g of hot milk
  • 3 medium eggs
  • 150 g of granulated sugar
  • 180 g of all-purpose flour
  • 100 g of butter
  • 1 untreated orange (zest and juice)
  • seeds from half a vanilla pod or vanilla extract
  • 1/2 packet of baking powder
  • 20 g of sliced almonds

Method:

Add the hot milk to the couscous, stir, cover, and let it rehydrate for 10 minutes. After the resting time, fluff it with a fork.
Break the eggs into a bowl, add the vanilla and sugar, and start whisking. When the eggs become light, fluffy, and frothy, add the melted butter and grated orange zest and continue mixing.
Add the sifted flour along with the baking powder, the squeezed orange juice (about 70 g), and mix until you obtain a smooth and homogeneous batter.
Finally, add the fluffed couscous and mix until incorporated into the batter. Butter and flour a 24-26 cm diameter mold, transfer the batter into it, level the surface, and sprinkle with sliced almonds.
Bake in a preheated oven at 180°C for 35-40 minutes.
