Lemon and ginger couscous with marinated prosciutto

How many times after indulging in large meals do you feel the desire to get back in shape, but without giving up the taste of a satisfying dish? Today we offer you a detox and tasty dish: Whole Wheat Lemon and Ginger Couscous with Marinated Prosciutto! The recipe is by our Fernanda Nicotra, food blogger at Giallo Zafferano!

INGREDIENTS:

  • 200 g raw couscous (whole wheat)
  • salt to taste
  • extra virgin olive oil to taste
  • to taste lemon juice
  • to taste lemon zest
  • to taste fresh ginger
  • 140 g prosciutto
  • to taste arugula
  • 200 g water (boiling)
  • to taste pink peppercorns

PROCEDURE:

Start by placing the couscous in a bowl, add salt, a drizzle of oil, and boiling water, stir, cover, and let it rehydrate for 10 minutes.

After the time has passed, fluff with a fork and let it cool completely. Arrange the prosciutto on a large flat plate, drizzle with a little oil and lemon juice, add some pink peppercorns, and let it marinate for 10-15 minutes.

Place the arugula in the center of the plate. Season the couscous with a bit of lemon juice, grated organic lemon zest, and fresh ginger, add some parsley and mix.

Place it in the center of the plate using a pastry ring, garnish with lemon slices, pink pepper, and parsley, bring to the table and serve.
