Gratinated Asparagus with Couscous

Oven-baked gratinated asparagus is a tasty and quick side dish to prepare. We made them with our Crispycous, the first couscous coating that doesn’t need to be fried!

Ingredients:

  • 500 g of asparagus (1 bunch)
  • 100 g of corn Crispycous
  • 50 g of grated Parmesan or Grana cheese
  • 1 bunch of parsley
  • 4 tablespoons of extra virgin olive oil
  • salt to taste
  • ground black pepper to taste

Preparation:

Wash and dry the asparagus. Remove the woodiest and hardest part of the stem.

Line a baking tray with parchment paper, add a drizzle of oil, and then arrange the asparagus in a row without overlapping. Add a pinch of salt and pepper and drizzle some oil on top.

Bake in a preheated oven at 180°C for 10 minutes. In a bowl, pour the Crispycous, add salt, pepper, chopped parsley, and grated cheese, mix, then add the 4 tablespoons of oil and continue mixing.

Remove the asparagus from the oven, cover them with the coating, and bake for another 10 minutes at 180°C.
