Couscous poke with chickpeas and avocado

Today we are preparing a special couscous inspired by a dish that is very trendy right now: poke! We will have fun together preparing an original and tasty couscous poke, a cheerful and colorful dish that closely resembles a real poke, but perfect for those who do not like raw fish or rice. The recipe for the chickpea and avocado couscous poke is by our Fernanda Nicotra, food blogger at Giallo Zafferano.

Ingredients:

  • 100g couscous;
  • 100g boiling water;
  • to taste, salt;
  • extra virgin olive oil to taste;
  • ½ avocado;
  • 80g drained canned tuna;
  • 100g cooked chickpeas;
  • lemon juice to taste;
  • garlic to taste;
  • chives to taste;
  • soy sauce to taste;
  • 1 egg;
  • toasted sesame seeds

Preparation:

Place the couscous in a bowl, pour in the boiling water, salt, and oil, and let it rest.

Meanwhile, cook the egg and remove it from the water 5 minutes after boiling. Peel the avocado and slice it thinly.

Toast the sesame seeds in a pan, without burning them, and season the chickpeas with oil, lemon juice, chives, and a pinch of garlic.

Fluff the couscous with a fork, arrange it in a bowl, and neatly add the drained tuna, avocado, chickpeas, and the shelled egg cut in half.

Garnish with toasted sesame seeds and soy sauce and enjoy.
