Are you tired of the usual Italian breakfast with bread and jam or milk/yogurt and cereals? Today we offer you a super tasty savory breakfast. The recipe for couscous pancakes with salmon and avocado is by our Francesca Lucisano, food blogger at Giallo Zafferano!
Ingredients for 8 pancakes:
- 100 g of medium couscous
- 100 ml of lukewarm water
- 50 g of all-purpose flour
- 1 egg
- 1 sachet of baking powder for savory dishes
- salt to taste
For the avocado cream:
- 1 avocado
- ½ lemon juice
- salt to taste
- pepper to taste
For the filling
- 100 g of smoked salmon
- avocado cream to taste
Preparation:
Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it and add the flour, baking powder, egg, and salt.
Mix well and pour two tablespoons of batter into a lightly greased and hot pan. As soon as the first pancake has bubbles on the surface, flip it and continue cooking for a few minutes.
Continue in this way until the batter is finished. Prepare the avocado cream. Peel it and mash it with a fork. Add the lemon juice, salt, and pepper. Top the pancakes with avocado cream and salmon and serve them at the table.
