Did you know that minestrone is also great in summer? Today we want to offer you a special recipe that skillfully combines the taste of couscous with the fibers of minestrone. These are the couscous clouds and minestrone, the name itself is quite intriguing, don’t you think?

Ingredients for 20 clouds:
- 100 g of organic whole grain rice and cauliflower couscous
- 100 ml of lukewarm water
- 150 g of minestrone
- 30 g of Parmesan cheese
- 1 egg
- 50 g of all-purpose flour
- Half a sachet of baking powder for savory dishes
- salt to taste
- pepper to taste
- vegetable oil for frying, as needed
Preparation:
Pour the couscous into a bowl and rehydrate it with the lukewarm water. Let it rest for 10 minutes, then fluff it with a fork.
Add salt, pepper, flour, Parmesan, egg, and minestrone, and continue to mix everything well. Heat the oil in a pan and use two teaspoons to drop small portions of the mixture into the oil.
Fry until golden brown, then remove them from the oil and place them on a tray with absorbent paper. Serve.
