September returns, and with it the desire to get back in shape, so why say no to a healthy and light dish based on couscous and guacamole? Today’s detox recipe is by our Fernanda Nicotra, food blogger at Giallo Zafferano!
Ingredients:
- 100g of couscous;
- 100g boiling water;
- Salt to taste;
- Extra virgin olive oil to taste;
- 1 ripe avocado;
- 30g of white onion;
- A pinch of chili pepper;
- Lemon juice to taste;
- 60g of tomatoes;
Preparation:
Cut a ripe avocado in half, remove the seed, and scoop out the flesh. Place it in the blender jar along with the tomato, onion, lemon juice, salt, oil, and chili pepper. Blend everything until you obtain a smooth cream.
Pour the couscous into a bowl, drizzle with boiling water, adjust the salt, and add a splash of oil. Let it rehydrate and then fluff with a fork.
Assemble individual serving glasses by creating a layer of sauce, a layer of couscous, and another layer of sauce. Garnish with mint, tomato, and lemon slices, refrigerate for 1 hour, and serve cold. Consume on the same day.
