Corn couscous with fava beans and bacon

A recipe with simple and rustic flavors, prepared with few but tasty seasonal ingredients like fava beans. The recipe for couscous with fava beans and bacon is by our Anna Attanasio, food blogger at Giallo Zafferano.

Ingredients:

  • 300 g of corn couscous
  • 300 g of hot water
  • 300 g of fava beans (already shelled)
  • 150 g of bacon in a single slice (or diced bacon)
  • 40 g of onion
  • 5 tablespoons of extra virgin olive oil
  • fine salt to taste
  • 1 pinch of ground black pepper

Preparation:

Pour the corn couscous into a bowl, add a pinch of fine salt, then add the hot water, stir, cover, and let it rehydrate for 10 minutes.

After the resting time, fluff it with a fork. Peel the fava beans. Cut the bacon into strips (or use already diced bacon). Finely chop the onion as well.

Pour the extra virgin olive oil into a pan and add the bacon, cook for about 2-3 minutes, then add the chopped onion and continue cooking until it softens.

Add the shelled fava beans and 200 ml of water, lightly salt and add a pinch of pepper, stir, cover with a lid and cook for about 15 minutes or until the water has evaporated, forming a thicker sauce.

Let them cool slightly. Pour the fluffed couscous into a large bowl, add the fava beans with bacon and mix. Serve the couscous with fava beans and bacon warm, also adding some pecorino shavings.
