Corn Couscous Fritters

Fritters are delicious treats that are truly irresistible. They are made on festive days but are always appreciated. Try this couscous-based recipe! The recipe for the corn couscous fritters is by our Francesca Lucisano.

Ingredients:

  • 100 g of corn couscous
  • 100 ml of lukewarm water
  • 2 eggs
  • 100 g of sugar
  • 30 ml of amaretto
  • All-purpose flour as needed
  • Half a packet of baking powder
  • Sunflower oil as needed
  • Granulated sugar as needed

Preparation:

Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it with a fork and add the eggs, sugar, amaretto, and baking powder.

Mix well and add enough flour to obtain a soft and homogeneous dough. From the dough, form small loaves and cut each loaf into pieces weighing about 10 grams each.

Roll them between your hands and fry them in hot oil. Remove them when they are golden and place them on absorbent paper to remove excess oil. Roll them in granulated sugar and serve.
