Do your children not eat fish? Here is a recipe for mini gourmets. With a few tricks, the dish becomes appealing even to the little ones. The trick is called couscous! The recipe for cod fillets in a corn couscous crust is by Francesca Lucisano, a food blogger from Giallo Zafferano.
Ingredients:
- 100 g of corn couscous;
- 200 ml of water;
- 300 g of cod;
- 50 g of breadcrumbs;
- To taste Extra virgin olive oil
- To taste Salt
- To taste Pepper
Method:
Pour the corn couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it with a fork.
Add salt, pepper, and breadcrumbs and mix until you obtain a homogeneous mixture. Place the cod on a baking tray lined with oiled parchment paper, season with salt and pepper.
Cover the fish with couscous, making sure it adheres well to the entire surface. Drizzle with more extra virgin olive oil and bake in a preheated static oven at 200°C for 20 minutes.
After this time, remove from the oven and let cool slightly. Serve the cod in a corn couscous crust at the table.
