Chickpea and spinach couscous burgers

The burgers are easy to prepare and perfect for getting children to eat spinach and vegetables. Here is our version with couscous. The recipe for chickpea burgers with spinach couscous is by our food blogger Dalila Putignano.

Ingredients:

  • 100 g of spinach couscous
  • 100 ml of vegetable broth
  • 2 tablespoons of chickpea flour
  • 200 g of boiled chickpeas
  • 1 egg
  • melting cheese
  • breadcrumbs
  • extra virgin olive oil
  • salt and pepper

Method:

Hydrate the couscous with hot vegetable broth and let it rest for 10 minutes. Meanwhile, place the previously boiled chickpeas, an egg, two tablespoons of chickpea flour, oil, salt, and pepper in the mixer.

Blend everything until you obtain a homogeneous mixture. Combine the chickpea cream with the spinach couscous and mix. Flatten a spoonful of the mixture on a bed of breadcrumbs. Place pieces of melting cheese in the center and cover with more mixture.

Using the breadcrumbs, shape the burger evenly and place them on a plate. Let the burgers rest in the fridge for at least half an hour, then cook them in a pan with a drizzle of extra virgin olive oil.
