The breaded chicken cutlets are a much-loved and versatile meat dish. Let’s explore this super crunchy version made with corn couscous! The recipe is by our food blogger Francesca Lucisano.
Ingredients for 4 people:
- 400 g of corn couscous;
- 100 g of grated Parmesan cheese;
- 600 g of chicken breast;
- extra virgin olive oil to taste
- salt to taste
Preparation:
Pour the corn couscous into a dish and add the Parmesan, salt, and pepper. Mix everything well, then coat the chicken breast slices in the dish with extra virgin olive oil.
Coat the meat in the couscous mix and bread it well on both sides. Cook the chicken breast in a pan, turning it often, until it is well browned on both sides. Serve at the table.
