Cake with couscous and chocolate chips

Ingredients:

  • 50 g of whole wheat couscous
  • 80 g of hot milk
  • 3 medium eggs
  • 150 g of granulated sugar
  • 180 g of all-purpose flour
  • 100 g of butter (or 80 g of seed oil)
  • the seeds of half a vanilla pod or vanilla extract
  • 1/2 packet of baking powder (about 8 g)
  • 80 g of chocolate chips

Preparation:

Pour the couscous into a bowl, add the hot milk, stir, cover, and let it rehydrate for 10 minutes. After the resting time, fluff it with a fork.

Break the eggs into a bowl, add the vanilla, sugar, and start whisking.

When the eggs become light, fluffy, and frothy, add the melted butter and continue mixing.

Add the flour, baking powder, and milk, and mix until you get a smooth and homogeneous batter.

Also add the fluffed couscous and chocolate chips, and mix until incorporated into the batter.

Transfer the batter into a mold and bake in a preheated oven at 180°C for about 30-35 minutes.
