Beetroot couscous mille-feuille with cream and strawberries

DISCOVER THE BEETROOT COUSCOUS

Ingredients:

  • 100 g of beetroot couscous;
  • 200 ml of milk;
  • 50 g of butter;
  • 100 g of powdered sugar;
  • 30 g of honey;
  • 40 g of all-purpose flour

For the filling

  • 200 ml of fresh cream;
  • 200 g of fresh strawberries;
  • 2 tablespoons of sugar;
  • 1 tablespoon of lemon juice.

Method:

Pour the couscous into a bowl and add the milk to rehydrate it. Let it rest for 10 minutes and in the meantime, whip the butter with the powdered sugar, then add the honey and continue whipping. Take the couscous and fluff it with a fork, then add the whipped butter and mix well. Finally, add the flour and mix further to obtain a firm and homogeneous mixture.

Form balls weighing about 30 grams each and place them on a baking sheet lined with parchment paper. Refrigerate for 1 hour, then take them out and flatten each ball with the bottom of a slightly moistened glass. Bake the resulting wafers in a preheated static oven at 200°C for 5 minutes. After this time, remove them from the oven and let them cool.

In the meantime, prepare the filling by whipping the cream and setting it aside. Wash the strawberries, dry them, and cut them into small pieces, then season them with a tablespoon of lemon juice and two tablespoons of sugar. Mix very well and let them rest for about 10 minutes.

Assemble your mille-feuille by placing a wafer at the base and filling it with a swirl of whipped cream and a spoonful of strawberries seasoned with sugar and lemon. Continue in this way to create three layers. Finish with a swirl of whipped cream, a spoonful of strawberries, and a whole strawberry placed as decoration. Let it rest for a couple of hours in the refrigerator, then serve the couscous mille-feuille with cream and strawberries at the table.
