Soft whole wheat couscous cookies

Perfect for breakfast or snacks, the cookies with whole wheat couscous are truly delicious, especially for the little ones! The couscous cookie recipe is by our Francesca Lucisano, food blogger at Giallo Zafferano.

Ingredients for 20 cookies:

  • 100 g of whole wheat couscous;
  • 200 g of all-purpose flour;
  • 150 ml of warm milk;
  • 80 g of sugar;
  • 100 g of butter;
  • 2 eggs;
  • 1 packet of baking powder

Preparation:

Pour the couscous into a bowl and add the warm milk. Let it rest for 10 minutes. After this time, fluff the couscous with a fork and add the sugar, eggs, and melted butter.

Mix very well and finally add the flour and baking powder. Mix well to obtain a homogeneous mixture. Shape the cookies on a baking sheet with two teaspoons and bake them in the oven at 180°C for 20 minutes.

After this time, take them out of the oven and serve them sprinkled with powdered sugar.
