Couscous, peas, eggs, and carrots: here is our vegetarian version based on couscous of the famous Cantonese rice, one of the most beloved dishes of Chinese cuisine. The recipe for Vegetarian Cantonese Couscous is by our food blogger Francesca Lucisano.
Ingredients:
- 100 g of Kids Couscous
- 100 ml of lukewarm water
- 100 g of peas
- 100 g of carrots
- 1 egg
- 1 tablespoon of soy sauce
- salt to taste
- pepper to taste
Preparation:
Pour the kids couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes, then fluff it with a fork.
Add salt, pepper, lightly blanched peas and carrots, and scrambled egg.
Mix everything well and finally add the soy sauce. Mix again and let it rest for 1 hour. Serve at the table.
