The spinach couscous muffins are a delicious and tasty snack. They are perfect to enjoy as an appetizer at dinner, but also for a savory buffet or an aperitif. The recipe for spinach couscous muffins is by our food blogger Francesca Lucisano!
Ingredients for 6 muffins:
- 200 g of spinach couscous
- 200 ml of lukewarm water
- 200 g of all-purpose flour
- 50 g of grated Parmesan cheese
- 1 egg
- 50 ml of extra virgin olive oil
- 1 packet of baking powder for savory preparations
- salt to taste
Preparation:
Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes and fluff it with a fork. Add salt, the egg, Parmesan, and oil. Mix well and add the baking powder and flour.
Mix again and, if the mixture is too stiff, add some water to make it more fluid.
Divide the mixture into muffin molds and bake in a preheated static oven at 180°C for 20 minutes.
After the cooking time, remove from the oven and let cool. Serve the muffins at the table.
