Prepare the recipe for crispy asparagus and couscous meatballs and you’ll see: one leads to another! They are very easy to make and suitable as an appetizer, main course, or snack. The recipe is by our food blogger Francesca Lucisano.
Ingredients:
- 100 g of Kids Couscous
- 100 ml of lukewarm water
- 100 g of asparagus
- 1 egg
- 30 g of grated Parmesan cheese
- Breadcrumbs as needed
- salt to taste
- pepper to taste
- extra virgin olive oil to taste
Preparation:
Blanch the asparagus and set them aside. In a bowl, pour the couscous and rehydrate it with lukewarm water. Let it rest for 10 minutes and fluff it. Add salt, pepper, egg, Parmesan, and mix well.
At this point, add the blanched asparagus and enough breadcrumbs to obtain a homogeneous mixture.
Form the meatballs, flatten them slightly, and cook them in a pan with a drizzle of oil. Serve the asparagus couscous meatballs at the table.
