A recipe to prepare in a few steps with all the flavor of summer: Couscous Salad with Melon and Cottage Cheese.

Ingredients for 4 people:
- 200 g of medium couscous
- 200 ml of water
- 200 g of melon
- 200 g of cottage cheese
- salt to taste
- pepper to taste
Preparation:
Pour the couscous into a bowl and rehydrate it with water. Let it rest for 10 minutes and in the meantime, cut the melon into cubes. Fluff the couscous with a fork, add salt, pepper, melon, and cottage cheese.
Give it a good stir and, if you prefer, add a drizzle of extra virgin olive oil. Let it rest in the refrigerator for at least a couple of hours. Serve at the table.
