Cake pops with whole grain rice couscous

Cake pops are spherical treats perfect for brightening up birthday parties, gatherings, and aperitifs. An original idea for children’s snacks as well. Here’s our version with couscous! The recipe for Cake pops with whole grain rice couscous is by our food blogger Anna Attanasio.

Ingredients:

  • 100 g of Martino whole grain rice couscous
  • 100 ml of milk
  • 30 g of granulated sugar
  • 60 g of plain Greek yogurt (or 40 g of plain classic yogurt)
  • 10 g of unsweetened cocoa powder
  • 100 g of dark chocolate
  • 60 g of plain biscuits
  • 1 vial of rum flavoring (optional)

for decoration:

  • colored sprinkles as needed
  • 20 g of melted chocolate (milk or dark)
  • 12 cake pop sticks (or skewer sticks)

Method:

Heat the milk and dissolve the sugar in it by stirring. Pour the whole grain rice couscous into a bowl, add the hot milk, stir, cover, and let it rehydrate for 10 minutes.

After the resting time, fluff the couscous with a fork. Pour the fluffed couscous into a bowl, add the yogurt, melted chocolate, and cocoa, and mix. Finely chop the biscuits and add them to the mixture, stirring until you obtain a homogeneous mixture.

Form 12 small balls. Melt the chocolate in a bain-marie or microwave and dip the tip of the cake pop sticks (or skewer sticks) into it. Insert each stick into the center of each previously prepared ball, roll the cake pops in colored sprinkles to make them stick.

Store in the refrigerator until ready to serve.
