Today is World Paella Day, the most significant dish of Valencian cuisine that has also become a staple in our kitchens! How to celebrate it? With a couscous paella, of course. The couscous paella is by our food blogger Francesca Lucisano.
Ingredients for 4 people:
- 200 g of corn couscous
- 150 ml of lukewarm water
- 400 g of chicken breast
- 2 bell peppers
- 1 Tropea red onion
- 1 glass of white wine
- 1 sachet of saffron
- salt to taste
- extra virgin olive oil to taste
Preparation
Pour the oil into a pan and add the chopped onion, letting it sauté for a few minutes. At this point, add the bell peppers cut into strips and the chicken breast in large cubes.
Let everything simmer for a few minutes, then deglaze with some white wine. Cover the pan with a lid and continue cooking for 20 minutes. Meanwhile, pour the couscous into a bowl and heat the water in a saucepan.
Pour a sachet of saffron into the water and let it dissolve. Rehydrate the couscous with the saffron water and let it rest for 10 minutes.
Fluff everything with a fork and season with salt and pepper. Mix well and pour the couscous into a pan, then add the seasoning with its cooking liquid and stir for a few minutes. The couscous paella is ready to be served.
