Apple and couscous fritters

An easy and quick recipe to satisfy your sweet cravings and offer a tasty snack to children: apple and couscous fritters! The recipe is by our Anna Attanasio, food blogger at Giallo Zafferano.

Ingredients:

  • 50 g of medium couscous
  • 50 g of hot milk

For the batter:

  • 110 g of flour
  • 30 g of granulated sugar
  • 1 medium egg
  • 100 ml of milk
  • 10 g of vegetable oil or butter
  • Grated zest of ½ untreated lemon
  • seeds from half a vanilla pod or vanilla extract
  • 1 teaspoon of baking powder
  • 200 g of apples
  • Peanut oil for frying as needed
  • Granulated sugar as needed for dusting

Procedure:
Add the hot milk to the couscous, stir, cover, and let it rehydrate for 10 minutes. After the resting time, fluff it with a fork.

Break the egg into a bowl, add the vanilla and sugar, and mix. Then add the oil or melted butter and the grated lemon zest, and continue mixing.

Add the sifted flour along with the baking powder, the milk, and mix until you get a smooth and homogeneous batter.

Add the chopped apples and finally the fluffed couscous, and mix until incorporated into the batter.

Heat the peanut oil in a pan, scoop spoonfuls of batter, and drop them into the hot oil.

Turn the fritters so they brown on both sides, then drain them well and let them dry on kitchen paper to remove excess oil.

Roll them in granulated sugar while still warm, in which you can mix some cinnamon powder according to taste.
