Pineapple Cheesecake with Cous Cous

How is it prepared?

Base

80 g of corn cous cous

80 g of warm pineapple syrup

25 g of butter

5 slices of canned pineapple

Cream Cheese

200 g of spreadable cheese

150 g of whipped cream

50 g of granulated sugar

1 sachet of vanillin or vanilla extract

Method

Heat the pineapple syrup, add it to the cous cous, stir, cover, and let it rehydrate for 10 minutes.

After the resting time, fluff it with a fork and add the melted butter, mixing well.

In a bowl, mix the cream cheese with the sugar and vanillin, then add the whipped cream and continue mixing.

Cut the canned pineapple into pieces.

Distribute the cous cous at the bottom of 3 cups or glasses, and using a piping bag or spoon, layer the cream cheese, add a layer of pineapple pieces, and cover with another layer of cream cheese until 2-3 cm from the rim.

Add pineapple pieces on top and garnish with mint leaves and cous cous.

Store in the refrigerator until ready to serve.
