Ham rolls with couscous and vegetables

Today we are preparing a very simple recipe together, suitable for children who do not want to eat vegetables: ham rolls with couscous, potatoes, peas, and carrots. A delicious, cheerful, colorful, complete, and very tasty dish that will surely make them happy!

Ingredients

100 g raw couscous
500 ml water
salt to taste
extra virgin olive oil to taste
200 g potatoes
150 g carrots
150 g peas
6 slices of cooked ham

Preparation:

Peel a large potato and a carrot, cut them into cubes, and place them in a pot along with the peas, cover with water, and add salt.

Bring to a boil and cook for 15-20 minutes or until the potatoes are soft but not mushy. Remove the vegetables with a slotted spoon and set them aside. Place the couscous in a bowl, add a good drizzle of oil, pour over 120g of hot vegetable broth (the broth where you cooked the vegetables), stir and cover.

Let it rest for ten minutes. Fluff the couscous with a fork and add half of the vegetables, mix. Lay the slices of ham on a surface, fill them with the couscous, and roll them up to form a cannoli.

Repeat for all the slices. Dress the remaining vegetables with a drizzle of oil and plate them as a side dish.
